Tequila Lime Steak Tacos

Tacos are a staple in my household. I could eat them every day! I am a bit of a nut according to the people that know me best because I put ketchup on my tacos! Weird right? It’s quite tasty and I turned many college friends onto it. But…before you stop reading don’t worry, there’s no ketchup in these tacos!

Tequila Lime Steak Tacos

Ingredients:
  • 1 (2 to 3-pound) flank steak
  • 1/2 cup tequila
  • 1/2 cup freshly squeezed lime juice
  • 1/4 cup olive oil
  • 1 tablespoon ancho chili powder
  • salt and black pepper
  • flour tortillas
  • taco toppings (cheese, lettuce, tomato, onion, sour cream, guacamole)  Click here for Brian’s Famous Guacamole recipe.
Directions:

In a glass bowl combine your tequila, lime juice and olive oil. Coat both sides of your flank steak. Add the chili powder using your hands to work it into the meat. Let stand about 1 hour.

Preheat the grill to high. Remove the steak from the marinade and season with salt and pepper. Grill 3 to 4 minutes per side for medium rare.

Remove the steak from the grill and rest 5 to 10 minutes. Slice across the grain.

Heat the tortillas to soften in the microwave for about 20-30 seconds between two wet paper towels. Fill the tortillas with your tequila lime steak, cheese, lettuce, tomato, onion and guacamole.
